Method for rapidly testing the quality of cereals, grits and flour by measuring the aggregation of gluten comprises stirring the test sample in aqueous solution/suspension with mineral salts, acids and/or liquors in a defined amount in a sample beaker (1) using an electrically driven stirring paddle (2) and measuring the resistance opposed to the paddle during the stirring process. Method for rapidly testing the quality of cereals, grits and flour by measuring the aggregation of gluten comprises stirring the test sample in aqueous solution/suspension with mineral salts, acids and/or liquors in a defined amount in a sample beaker (1) using an electrically driven stirring paddle (2) and measuring the resistance opposed to the paddle during the stirring process. The torsion forces acting on the electric motor from the beginning of the stirring process are measured using wire strain gauges with the measurement being completed once the maximum rotating torsion is reached. The measuring process is monitored, controlled and evaluated by software. An independent claim is also included for a device for carrying out the above method. Preferred Features: The revolution of the electric motor is prescribed by software and automatically corrected by continuous comparison with theoretical and actual values.
