The present invention proposes new sources of raw materials for isolating fungi with amino oxidase enzyme activity. Specifically, the fungi described in the present invention originate from vines and other natural ecological niches closely linked to that addressed in the application, which are not customarily exploited for such purposes. These are thus new raw materials of low cost and simple, viable production processes. The present invention also relates to the production of enzyme extracts originating from preisolated fungi containing enzymes with the ability to degrade biogenic amines (i.e. histamine, tyramine and putrescine) without the need for the presence of molecular oxygen in the environment. Therefore, the enzyme extracts of fungal origin described in this invention could be used after the process of preparing fermented products that naturally exhibit high concentrations of biogenic amines, with a view to reducing the concentration thereof prior to market launch.
