BLACK LENTINUS EDODE AND MANUFACTURING METHOD THEREOF

PURPOSE: A manufacturing method of black lentinus edodes is provided to increase the content of β-glucan and amino acids. CONSTITUTION: A manufacturing method of black lentinus edodes comprises the steps of: steaming lentinus edodes for 20-30 minutes (S1); and drying the steamed lentinus edodes at 50-70deg.C (S2). The steps of S1 and S2 are repeated 9 times by turns. The step of S2 comprises heat-drying for 6-10 hours. β-glucan is generated while the two steps are repeated.
