PURPOSE: Non-gelling beef leg bone soup using beef leg bones and a producing method thereof are provided to prevent the loss of nutrients in the beef leg bones and the generation of bad smells. CONSTITUTION: A producing method of non-gelling beef leg bone soup using beef leg bones comprises the following steps: immersing the beef leg bones in water to remove blood(S10); heating the beef leg bones under pressure in an extractor to obtain beef leg bone soup(S20); filtering the beef leg bone soup(S30); emulsifying the beef leg bone soup using a homogenizer(S50); and packing and high-temperature sterilizing the homogenized beef leg bone soup pack at 120-122 deg C for 14-16 minutes(S60).
