PROBLEM TO BE SOLVED: To provide a buckwheat noodle having efficacy which all of an ancient rice, an ancient miscellaneous cereal, an ancient rice yeast extract and honey have in addition to efficacy of a buckwheat flour.;SOLUTION: A raw material powder containing a buckwheat flour of 64 to 75 wt.%, an ancient rice flour either of a black rice or a red rice of 5 to 12 wt.%, a wheat flour of 18 to 22 wt.%, an awa flour of 0.1 to 0.5 wt.%, a kibi flour of 0.1 to 0.5 wt.% and a hie flour of 0.1 to 0.5 wt.% is addition mixed with ancient rice yeast extract of above either ancient rice of 0.1 to 0.5 wt.% and honey of 0.1 to 0.5 wt.% to make raw material, and an appropriate amount of water is added to it and kneaded to prepare a buckwheat substrate, then the substrate is rolled by a noodle rod and properly cut to manufacture a buckwheat noodle.;COPYRIGHT: (C)2014,JPO&INPIT
