METHOD FOR BREEDING BREWER'S YEAST, BREWER'S YEAST BRED BY THE METHOD, AND METHOD FOR PRODUCING ALCOHOLIC BEVERAGE AND SAKE BY USING THE BREWER'S YEAST
PROBLEM TO BE SOLVED: To provide a method for breeding brewer's yeast that suppresses the production of ethyl caproate and highly produces isoamyl acetate so as to have a high ratio of the isoamyl acetate to isoamyl alcohol.SOLUTION: Cerulenin-resistant brewer's yeast having the heterozygous genotype of FAS2 gene is subjected to mutation treatment, a cerulenin-sensitive mutant having the homozygous genotype of the FAS2 gene is selectively separated from a population of the brewer's yeast subjected to the mutation treatment, and an alcoholic beverage and sake are produced. The brewer's yeast is Kyokai No.1601 yeast or Kyokai No.1801 yeast. The mutation treatment is UV treatment.
