The present invention relates to rice cake having a prolonged storage period by inhibiting retrogradation of starch and loss of water in the rice cake and to a method for manufacturing the rice cake. More specifically, the present invention relates to a method for manufacturing rice cake containing D-tagatose comprising steps for mixing 100 parts by weight of a grain powder, 0.1-10 parts by weight of salt, 30-70 parts by weight of water, and 0.1-30 parts by weight of D-tagatose and kneading the mixture. Also, the present invention relates to a composition for the rice cake containing 100 parts by weight of a grain powder, 0.1-10 parts by weight of salt, and 0.1-30 parts by weight of D-tagatose and the rice cake containing D-tagatose manufactured using the method and/or the composition.;COPYRIGHT KIPO 2014
