The present invention relates to a fermentation method of mixed grains using a novel lactic acid bacteria separated from grains and a mass production method thereof, and more specifically, to a method for producing fermentation mixed grains in which the titer of protease and amylase is high by fermenting mixed grains with Lactobacillus plantarum, Streptococcus thermophiles, and Enterococcus fecalis. According to the present invention, the disadvantages of general mixed grains, that the digestion is difficult and the texture is rough, can be supplemented by a lactic acid bacteria fermentation process, and fermentation mixed grains with excellent functions that the ingestion and digestion are facilitated by protease and amylase can be produced.
