PROBLEM TO BE SOLVED: To provide, for obtaining bread whose hardening is inhibited, a hardening inhibitor of bread, a hardening inhibiting method of bread, a manufacturing method of bread, a mix powder for bread, and bread and to provide bread whose hardening is favorably inhibited thus.SOLUTION: The provided hardening inhibitor of bread includes, as an effective component, a grain flour having an impaired starch content of at least 15 mass%; a hardening inhibiting method of bread for manufacturing bread by mixing a grain flour having an impaired starch content of at least 15 mass% is also provided; a method for manufacturing bread by mixing a grain flour having an impaired starch content of at least 15 mass% is also provided; a mix powder for bread including at least 0.1 mass% of a grain flour having an impaired starch content of at least 15 mass% with respect to 100 mass% of the combined sum of the grain flour and a wheat flour is also provided; and bread with which a grain flour having an impaired starch content of at least 15 mass% is mixed is also provided.
