instant corn dough. The present invention relates to a process for producing fresh maize pasta, nixtamalized flour and products thereof. The invention is a novel process for producing corn dough (pasta) to be used in the production of tortillas, fried or cooked tortilla chips, toasted or corn chips. The new process produces maize dough directly from raw materials without the traditional cooking and maceration steps. It utilizes a number of processing steps including milling, blending, hydrating, baking and continuous cooling to stop gelatinization. The new process uses very little water and produces no waste water.
