The present invention relates to a vacuum drying apparatus to reduce food waste which performs a drying process even at low temperatures by injecting food waste into a vacuum tank maintaining a proper vacuum level; and saves energy by recovering waste heat generated when the vacuum tank is heated, supplying the waste heat to the vacuum tank again. According to the present invention, the vacuum drying apparatus to reduce the food waste comprises: the vacuum tank injecting and discharging the food waste; a heating medium installed in the outer surface side of the vacuum tank, heating the vacuum tank by electric heating; a stirrer making the food waste an evenly mixed state; a vacuum pump maintaining the inside of the vacuum tank as a vacuum state by absorbing residual air and evaporated vapor generated from heating the heating medium; and a residual heat collecting unit collecting and injecting residual heat released to the outside due to heating of the heating medium into the vacuum tank.
