The present invention relates to a noodle prepared with stachys sieboldII MIQ. and Dangjo peppers, and a preparing method thereof. More specifically, the preparing method of the noodle comprises the steps of: a first step of obtaining an extract by washing and drying stachys sieboldII MIQ. to remove water and cutting them into small pieces then dipping well enough into a hydrothermal solution or an ethanol solution; a second step of washing, drying, and pulverizing the roots of stachys sieboldII MIQ.; and a third step of preparing noodles after mixing, kneading, noodle-making, and drying the stachys sieboldII MIQ. extract and the Dangjo pepper extract. The noodles containing the stachys sieboldII MIQ. and the Dangjo peppers have effects on diabetes prevention, antibacterial function, brain cell activation, and urination.
