PROBLEM TO BE SOLVED: To determine a heat treatment state of a meat sample with high efficiency and accuracy, relative to a conventional art such as SDS-PAGE.;SOLUTION: A sample 10 is used as a meat reference sample whose heating temperature for one minute is known, coherent light is radiated to the sample 10 by a light emission/reception unit 110, then scattered light including Raman scattered light is received, then a data collection unit 130 collects data of spectra and a specification unit 150 specifies a peak position of an amide 1 band. The specification unit 150 associates the data of spectra having an index peak derived from protein and intensity of an index peak derived from lipid is equal to or less than standard level, with the heating temperature for one minute, and then stores it in a holding unit 170 as a reference table. The sample 10 is used as a meat examination sample whose heating temperature for one minute is not known, at this time the specification unit 150 specifies the peak position of the amide 1 band from the data of the spectra of the examination sample collected by the data collection unit 130, and a determination part 180 determines the corresponding heating temperature for one minute, by referring to the reference table stored in the holding unit 170.;SELECTED DRAWING: Figure 1;COPYRIGHT: (C)2016,JPO&INPIT
