The present invention relates to a processed meat product with a reduced nitrite content and a method for manufacturing the same and, more specifically, to a processed meat product and a method for manufacturing the same, wherein a nitrite content is reduced, formation of a red color in a final product is facilitated, and functional properties of dietary fiber are provided. According to the present invention, a drawback of an existing method for adding a red pigment of safflowers is mitigated by adding wheat dietary fiber colored with a red pigment of safflowers to the processed meat product; deterioration of redness of the final product is prevented while the nitrite content in the processed meat product is reduced; and the processed meat product exhibits excellent flavor and color expression.;COPYRIGHT KIPO 2016
