FIELD: food industry.;SUBSTANCE: invention relates to food industry, in particular, to production of biologically active anthocyans concentrates with high antioxidant activity of rose petals red colour. Rose petals without preliminary extraction directly are added to hot sugar syrup, followed by filtration or centrifugation.;EFFECT: invention allows to reduce number of steps, time, avoid use of chemical reagents and ensure preservation of anthocyans for three months of more than 90 %.;1 cl, 6 ex, 2 dwg
