The present invention relates to a bioelectronic tongue of high selectivity based on a human taste receptor functionalized single-walled carbon nanotube-field effect transistor (swCNT-FET) and simulating a human taste system. The present inventors first applied taste receptor proteins to artificial tongues and successfully demonstrated high selectivity, sensitive taste electronic tongues. It implements an electronic tongue that mimics the human taste system by using human taste receptor protein as the primary signal transducer of the electronic tongue. It is also excellent in selectivity and sensitivity compared to conventional electronic tongue. The bioelectronic tongue according to the present invention can be used as a tool for the purpose of quality inspection or selection of taste material in the food industry.
