The present invention relates to a method of manufacturing malt with improved enzyme activity by using Korean barley, and more specifically, to a method of manufacturing malt, performing microwave or ultrasonic wave treatment when barley is immersed in water, so as to manufacture malt with remarkably improved enzyme activity. Since the method according to the present invention further comprises one additional step of the microwave or ultrasonic wave treatment which is a new technique besides to an existing malt manufacturing method, the malt with largely improved enzyme activity, such as alpha-amylase or beta-amylase, can be manufactured without changing compositions of existing malt. Accordingly, the method enables to manufacture new type of malt which is discriminated from existing imported or Korean malt. Moreover, the method can be applied to a malt manufacturing method for manufacturing sweet rice drink without modification.;COPYRIGHT KIPO 2017
