The present invention relates to a method for preparing fermented coffee which comprises the following steps: fermenting raw coffee beans using lactic acid bacteria isolated from raw coffee beans for luwak coffee, produced from a Paradoxurus jerdoni; and drying and roasting the raw coffee beans fermented in the previous step to prepare fermented coffee beans. The method of the present invention is hygienic and mass-producible without the abuse of animals than conventional methods, and can provide the method for preparing high-quality fermented coffee having a constant flavor.;COPYRIGHT KIPO 2017
