The present invention relates to a curing agent for processing chicken meat, a chicken meat product processed by using the curing agent, and a production method of the chicken meat product. More specifically, according to the present invention, the curing agent for processing chicken meat contains edible fibers, a gelling agent, medium-chain triglycerides (MCTs), and a caking prevention agent.
