The present invention relates to a method of extracting duck wing meat which allows duck wing meat to be extracted by easily separating a duck wing bone from a duck wing, and a method of processing the duck wing meat extracted thereby. According to the method of extracting duck wing meat of the present invention, the duck wing meat surrounding the duck wing bone is extracted by applying an extraction knife to the side portion of the duck wing that was attached to the duck body and cut from the duck body, or the duck wing meat is extracted by separating the duck wing bone, using a duck wing bone fixing jig unit and a duck wing meat separating jig unit, after cutting both end portions of the duck wing that were attached to the duck body and cut from the duck body. Additionally, the duck wing meat extracted by the method of extracting duck wing meat of the present invention is processed and stored through a brining step, an aging step, a thermal processing step, a vacuum packing step, and a freeze storage step, and such primarily processed duck wing meat can be cooked with ease.;COPYRIGHT KIPO 2017
