METHOD FOR DRYING AND CONCENTRATING GRAPE FOR PRODUCING SUGAR-FREE GRAPE WINE, METHOD FOR PRODUCING SUGAR-FREE GRAPE WINE, AND SUGAR-FREE GRAPE WINE THEREOF
The present invention relates to a method for drying and concentrating a grape for producing a sugar-free grape wine. More specifically, the present invention can produce an excellent quality grape wine by having a high degree of alcohol with respect to a grape wine, by having a thick red color, by increasing physiologically active substances such as polyphenol and the like, and by improving tastes, fragrances, and palatability. In a process of producing a wine by fermenting grapes, the sugar content of the grapes can be increased to improve a brewing process in which the sugar content of sugar or the like is artificially increased to supplement insufficient sugar of the grapes. According to the method of the present invention, the unique sugar of grapes is used, thereby providing a raw material grape of very excellent quality to a grape wine brewing process even without adding separate sugar. Accordingly, a good result may be obtained even in terms of the alcohol quality of a wine. The quality level of a domestic farm winery production grape wine can be improved. A new type of product can be developed by applying a new type of drying and concentrating method.;COPYRIGHT KIPO 2017
