The present invention relates to food processing methods wherein, after exposure of the processed food to a microwave, a crispy, crunchy or crusted food is obtained. The present invention further relates to pellets which may be used in the present methods and to crispy, crunchy or crusted foods obtainable by the present methods. Specifically, the present invention relates to food processing methods comprising the steps of a) providing a food; b) coating the food with a dry or granular powder comprising 5 wt% to 50 wt% dextrin; (c) exposing the granulated coated food to water or steam for 0.1 to 10 seconds; and d) cooking, frying or boiling food exposed to water or steam.
