Disclosed is the process of preparing a ready-to-cook mixed fruit with coconut milk locally known as ginataang halo-halo comprising the steps of: blanching, peeling, slicing, partial cooking and dehydrating of sweet potato and yam. Peeling, slicing, partial cooking and dehydrating of banana. Dehydrating of sago and milling of glutinous rice to powder. Mixing the dehydrated ingredients together with sugar, coconut milk powder and glutinous rice powder. Packing of the mixed ingredients in a packaging container. The process aims to produce a shelf-stable, ready-to-cook mixed fruit with coconut milk of dry composition.
