The present invention relates to a chicken cracker with a scallion flavor, comprising: a step of cooking cut chickens by roasting or frying the same; a primary frying step of injecting chicken cooked in the cooking step into a pan, and adding a scallion flavor base containing 80-120 parts by weight of vegetable oil based on 100 parts by weight of animal oil, 20-40 parts by weight of green onions, 10-20 parts by weight of onions, and 5-15 parts by weight of other additives to primarily fry the same; and a secondary frying step of, after the primary frying step, adding a scallion flavor sauce containing 300-500 parts by weight of brewed soy sauce based on 100 parts by weight of the scallion flavor base, 100-150 parts by weight of apple vinegar, 10-20 parts by weight of acetic acid, 1,000-2,000 parts by weight of starch syrup, 20-40 parts by weight of Chinese soy sauce, 40-100 parts by weight of red pepper paste, 10-30 parts by weight of oyster sauce, 20-60 parts by weight of minced onions, 20-60 parts by weight of minced garlics, 20-60 parts by weight of minced peppers, 10-50 parts by weight of black soybean sauce, and 150-300 parts by weight of sugar to secondarily fry the same. The method for manufacturing a chicken cracker with a scallion flavor provides a luxurious flavored chicken crackers with rich flavor and taste of scallions.
