The present invention relates to a polysaccharide fraction derived from carrot residue having immune-boosting functions, and a production method thereof. To this end, the production method comprises the following steps: (A) treating the dried carrot residue powder with an enzyme; (B) filtering the enzymatically treated carrot residue to remove residues; (C) mixing and stirring porous materials and the enzymatically treated carrot residue filtrate from which the residues are removed; and (D) mixing an aqueous alcohol solution with the enzymatically treated carrot residue filtrate treated with the porous material, so as to precipitate polysaccharide to obtain the polysaccharide fraction. According to the present invention, it is possible to excellently improve immune functions, and a user is able to take the same in a form of food without toxicity, thereby improving immune functions through dietary habits and lifestyle of everyday life for a long time.
