FIELD: food industry.;SUBSTANCE: method involves preparing water bacteria swab from a sample, filtering and pasteurizing the swab to kill vegetative forms of microorganisms, inoculating a bread substrate with the pasteurized swabs from the product and preparing a control bread substrate by means of sterile water, incubating them at 40°C for 16 hours, preparing aqueous extracts of bacterial α-amylase from the bread substrate and determining the dilution activity (DA) by calculation.;EFFECT: invention ensures the possibility to detect potato disease not only in flour but also in other grain processing products by developing a method for detecting infestation by pathogens and the possibility of developing bread potato disease, contributes to reducing time and eliminating the stage of trial laboratory baking, thereby increasing the analysis efficiency in grain processing products.;1 dwg
