PROBLEM TO BE SOLVED: To provide instant hot-air-dried noodles that have, while having a natural appearance like raw noodles, an eat-texture more like raw noodles than the conventional method, and to provide a method for producing the same.SOLUTION: A method for producing instant hot-air dried noodles includes: a bulking treatment step in which a noodle string obtained by drying noodles which are α-converted by steaming and/or boiling, with hot-air to a water content of 5 to 17%, is subjected to a high-temperature high-speed hot-air treatment or a treatment in which a high-temperature high-speed hot-air and a saturated water vapor are combined, to bulk the noodle string; and, following the bulking treatment step, a super heated steam treatment step in which the bulking treated noodle string is subjected to a heating treatment with a super heated steam.SELECTED DRAWING: None
