The present invention relates to a method for manufacturing a functional rice cake comprising insect powder, the method comprising the following steps: (a) preparing edible insect powder obtained by mixing 10-300 parts by weight of Protaetia brevitarsis seulensis larva powder and 10-300 parts by weight of Gryllus bimaculatus powder with respect to 100 parts by weight of mealworm powder; (b) preparing nut powder by grinding nuts; (c) preparing a dough material by mixing, in a dried condition, 0.5-1.5 parts by weight of salt, 5-20 parts by weight of gum, 3-7 parts by weight of the edible insect powder, and 2-5 parts by weight of the nut powder with respect to 100 parts by weight of rice powder; (d) preparing a dough product by putting 15-25 parts by weight of water with respect to 100 parts by weight of the dough material and kneading the same; and (e) manufacturing the rice cake by steaming the dough product. Accordingly, the method for manufacturing a functional rice cake comprising insect powder not only balances nutrients of the rice cake in a nutritional aspect by increasing the content of high-quality protein but also contributes to a decrease of environmental pollution by using eco-friendly food materials.
