STEAMED FERMENTED RICE CAKE MANUFACTURED BY PREMIX USING MAKGEOLLI DRIED POWDER AND MANUFACTURING METHOD OF FROZEN DOUGH USING STEAMED FERMENTED RICE CAKE
The present invention relates to a steamed fermented rice cake using a premix using a makgeolli (raw rice wine) dried powder and a manufacturing method of frozen dough using steamed fermented rice cakes, and more specifically, the purpose of the present invention is to manufacture a premix using edible flowers or medicinal herbs containing useful ingredients and makgeolli dried powder and to develop a product for improving preference and qualities by manufacturing a steamed fermented rice cake or frozen dough through the premix. To this end, the present invention comprises: a premix preparing step (1) which prepares 100 parts by weight of rice powder, with respect to the 100 parts by weight of rice powder, 15-20 parts by weight of sugar, 0.5-2 parts by weight of yeast, 0.5-1 part by weight of baking powder, 1-2 parts by weight of salt, and 1-5 parts by weight of frozen and dried makgeolli powder; a step (2) which mixes the prepared materials and agitates the same; a step (3) which, with respect to the rice powder, puts 80-100 parts by weight of water at 40-50C into the agitated material, and uses an agitator to obtain a dough; a step (4) which sets the temperature of a fermenting machine as 35-40C and ferments the dough to be doubled in terms of volume for 30-60 minutes; a step (5) which puts the dough in a dough frame to hit the same several times; and a step (6) which ferments the same for 10 minutes by a weak heat, steams the same by a strong heat for 15 minutes, and stands the same by a weak heat for 5 minutes to manufacture a steamed fermented rice cake.;COPYRIGHT KIPO 2019
