To solve the problem that there is a possibility that oil and fat at position 2 rich in palmitic acid that is a raw material of an oil and fat composition containing XPX triglyceride at position 2 bonded to palmitic acid and positions 1 and 3 bonded to X is crystallized when a reaction temperature is low to lead to a trouble such as reactor blockage (X: unsaturated fatty acid or saturated fatty acid having 10 or less carbon atoms).SOLUTION: A cloud point of a raw material mixture can be set at 39.5°C or lower by being mixed with specific raw material fatty acid or its lower alcohol ester, and even when a reaction temperature is low, crystal deposition does not occur.SELECTED DRAWING: None
