The invention relates to devices and methods for cooling freshly baked bread in a continuous stream under vacuum conditions. A device comprises a frame, a gripping device and guides, vacuum chambers, a vacuum pump, a condenser, a hoisting mechanism and a control unit. A method includes delivery of baked bread by means of the gripping device along the guides to the vacuum chambers while ensuring simultaneous cooling of the bread in a plurality of chambers, unsealing of the chambers after cooling of the bread, equalization of pressure inside the chambers, and delivery of the cooled bread onto a conveyor. The invention is aimed at reducing cooling time and increasing the shelf life of bread.
