The present invention relates to a process for preparing dehydrated potato flour which comprises: (a) cutting the potatoes until strips between 5 and mm thick are obtained; (b) scalding the unpeeled potatoes at a temperature comprised between 95ºC and 100ºC for less than 5 minutes and then immersing 10 the potatoes in water at a temperature less than or equal to 12ºC for 10-20 minutes; (e) draining the potatoes and introducing them in an oven at a temperature between 70ºC and 80ºC for 5-7 hours; and preparing the potato flour by grinding and sieving until an average particle size greater than 500 µm and less than 3 mm is obtained. The invention further relates to the dehydrated potato flour obtained from said process.
