Under sterile operation, a seed liquid of a fermentation agent is artificially inoculated, and is placed in an intelligent fermentation tank for solid-state fermentation; in a solid-state fermentation process of the fermented tea, changes in smell of the fermented tea in the fermentation tank are acquired through an olfactory sensor in real time; and changes in color and the polyphenol content of the fermented tea in the fermentation tank are acquired through a visible/near infrared spectrum module in real time.
