The present invention provides a method of preparing a dried yellow croaker dish using hot pepper paste. The method comprises the steps of: steaming a dried yellow croaker with glasswort liquid, naturally drying the dried yellow croaker, and separating the dried yellow croaker into thin slices, to prepare dried yellow croaker fillet; evenly mixing hot pepper paste with 0.1-5 parts by weight of one or more additives selected from the group consisting of an organic acid, a Japanese apricot extract, a licorice extract, a ginseng extract, an onion extract, and a ginger extract with respect to 100 parts by weight of the hot pepper paste, to prepare a hot pepper paste mixture; and with respect to 100 parts by weight of the hot pepper paste mixture, adding 50-100 parts by weight of the dried yellow croaker fillet to the hot pepper paste mixture under stirring, followed by fermentation and aging. The dried yellow croaker dish thus prepared has desirable color, taste, flavors, and the like, thereby enhancing consumers preferences, even when stored for a long period of time, maintaining a chewy texture of the dried yellow croaker, and further ensuring medicinal effects of the glasswort liquid and the hot pepper paste mixture added during the preparation process.
