摘要

New technologies in smoking are allowing processors to consider a wide range of options when choosing a method for adding zing to their sausage products. And, many processors are choosing sides between the slow artistry of traditional smoking methods and the faster production that can be achieved through new innovative application techniques with natural liquid smokes or smoked casings.
