New York orchardist wants to make high-value product from lower-value apples. Travelers to Europe often notice how little Europeans waste compared to Americans. Could reducing waste be a key to greater prosperity? They re testing that theory in New York's Hudson River Valley north of New York City. A growing number of apple growers there are making, bottling, and selling hard cider, much like the English and the French have been doing for centuries.
