Back in May the NFU wrote to all of the major food service organisations, asking for some clarity around their lamb sourcing policies. Often this "middle ground catering sector" has the unwarranted reputation for just buying at the cheapest price, with no regard for provenance or quality.The food service market and the businesses that trade within it are wildly different, with anything from a one-off cafe to some of the largest high street brands and chains we are all familiar with.Each business has its own drivers for food procurement, but what is increasingly clear is that what customers have come to expect in retail outlets, is lending itself more and more to the food service market.
