The Castelmagno cheese is believed to have been enjoyed by Charles the Great and has been manufactired in the province of Cuneo in Italy since the beginning of the 13th century. This round, semi-fat cheese, which is matured for 5 months, weighs 2-7 kg, has an intense odour and aroma, and it contains 35-45% of protein and >34% of fat. An account is given of the cheesemaking techniques, cheese texture and of the history of the cheese, and details are given of the climate, soil and flora in the area where it is manufactured.
