FRESH-CUT fruit production, particularly apple slices, is beginning to emerge as a major new marketing segment. However, there is one overriding issue that will determine whether this venture can be a long-term viable option for growers: food safety.Processing fruit into fresh-cut slices increases the risk of bacterial contamination by breaking the natural exterior of the fruit. Because of this, attention to detail when it comes to food safety concerns is critical.
