摘要

[Introduction] Banana is a commercially important fruit crop of the world. However, banana is a climacteric fruit and has a short storage life. Many postharvest techniques have been developed to extend its shelf life, such as manipulation of atmosphere and temperature condition. Heat treatment is one of the postharvest techniques that have been used for insect disinfestation (Nakamura, et al"2011), disease control, to modify fruit responses to other stresses (Ambuko, et al., 2013) and maintain fruitquality during storage. Currently, the response of Cavendish banana to heat treatment has not been much studied and more information is needed to understand its effect especially on sugar metabolism during ripening. In this report, hot air treatment wasapplied to banana and changes in activities of sugar metabolism enzymes were observed.
