A study was carried out to clarify the relationship between nitrogen fertilizer and the free amino acid composition of brown rice. Glutamic acid was the most abundant among the free amino acids tested in brown rice, while the other major amino acidsfound were aspartic acid, asparagine, arginine, alanine and glutamine. The amounts of free amino acids extracted from brown rice showed a significant negative correlation with the total nitrogen content of brown rice. The total amount of free amino acids, glutamic acid, aspartic acid, asparagine, glutamine and alanine contents of rice grains were higher without than with nitrogen fertilizer application to the rice crop. The contents of total free amino acids and glutamine in brown rice tended to increase with decreasing 1000-grain weight.
