The bottled coconut water beverage could serve as natural soft drink in place of synthetic beverages. India. Process Technology developed by the Regional Research Laboratory, Trivandrum, Kerala. Coconut water is collected from unspoiled nuts under hygienic conditions. The water is immediately filtered through a clean cheese cloth. The flavour of the filtered water is upgraded by adjusting the pH to 4.5 or less and the total soluble solids contents to eight percent. Citric acid is the acidulent used in combination with 0.1 to 0.15 percent sodium citrate. Good quality refined sugar is used to adjust the soluble solids content. For improving taste, 0.01 to 0.05 percent sodium chloride is also added.
