摘要

Five samples each of roasted peanuts [groundnuts], walnuts, hazelnuts and almonds were purchased in Modena, Italy, and the edible part was analysed for total fibre, calcium, magnesium, zinc, iron and copper. In addition, samples of commercial dietary fibre supplements (ground crude wheat bran products) were collected over 5 consecutive years and analysed for lead, cadmium, zinc and copper contents. Concentrations of minerals varied with the source of the fibre. In the wheat bran samples, the concentrations of toxic metals were low (0.161 and 0.074 mg/kg for lead and cadmium respectively) and the content of cadmium, but not lead, varied among years.
