When combined with cool-chain management, fruit picked in the hot days of the English summer is given the maximum opportunity to be eaten in peak condition. Research by Gerard van den Boogard at the Wageningen Research Centre in Holland however, has put the cool-chain to the test, and found some unexpected results.
