Protein Platform Dominates for Dairy Product Innovation

According to the FAO, cow's milk, the type mainly used for processing, has seen production rise to over 635 million tons a year globally. Total milk production is much higher at about 750 million tons, with the additional amount made up of other milks such as buffalo, goat and sheep. Furthermore, these totals are continuing to rise, with growth in recent years led by South Asia, which has been the main driver of milk production increases in the developing world. The US is currently by far the leading producer of cow's milk globally, with a near-15% share in 2012, but it is being increasingly challenged by non-traditional dairy producing countries, such as India and China, who take second and third places with 9.5% and 5.6% shares, respectively. Other strong growth has come from Brazil, which has overtaken Germany, the leading European producer, and then Rus- sia to move into fourth position, over the past few years. Turkey has also entered the top 10 over the past few years, displacing Poland, while New Zealand has also continued to see good growth, while maintaining its 8th position overall.
