The level of consumption of cheese per head in the UK is among the lowest in Europe, at 9.4 kg in 1997, compared with 23.4 kg in France, which has the Highest level, and an average 17 kg for European consumers as a whole. Consumption per head in the Uk increased by 11 per cent between 1991 and 1997. Household consumption of cheese declined by 3 per cent between 1992 and 1996. While consumption of natural cheeses fell by 5 per cent, processed cheese consumption witnessed a 20 per cent increase, mainly as a result of the growing demand for convenience products for the snacking/school lunchbox markets. Household expenditure on cheese increased by 17 per cent between 1992 and 1996, reflecting a trading up to higher-priced products.
