The market for cheese increased by 4 per cent in volume and by 20 pe cent in value between 1993 and 1997, taking the market to 282,000 tons worth f1.35 bn. The greater value rise reflected a trading-up by consumers to more expensive products as well as inflation. 1997 saw a 1 per cent rise in market volume, following an increase of 12 per cent in 1996. The market continues to be dominate by Cheddar, with 57 per cent of volume And 55 per cent of value. The main growth sectors during 1997 were processed Cheese, sales of which increased by 13 per cent in value, and soft natural cheese, With sales up 5 per cent. Cheddar, territorial and Continental cheeses remained Fairly static, while the pick'n'mix sector fared badly, declining by 25 per cent in volume and 28 per cent in value.
