摘要

Strong impact of heavy metals on the physical, chemical, and technological properties of meat products presents a pressing problem. The research goal is to perform comparative assessment of ecological and nutritional qualities of meat and meat product samples from young cattle of different breeds, raised in the industrial zone of RNO - Alania. The study involved animals of different breeds. The content of heavy metals in the meat and sirloin samples was measured with the AAZ-115-M1 spectrophotometer. The data were statistically analyzed with the computer software. Meat from the calves of the experimental group III contained 77.3% less zinc, 81.0% less lead, and 88.2% less cadmium. The content of the elements in the samples of musculus longissimus of the calves of the experimental group III did not exceed the maximum permissible concentrations (MPC). The third sample of the final meat product from the Schwyz animals had 1.24% and 1.49% higher content of dry matter and protein than the control sample. The third sample of the meat product contained 79.8% less zinc, 88.9% less lead, and 83.32% less cadmium than the control sample.
