This study was performed in order to clarify the application of POTATO AMYLOPECTIN (PAP) starch, obtained from genetically modified potato, which produces about 100/100 of amylopection, in paper-coating. A commercial grade of an oxidized potato starch which con- Tans approximately 20/100 amylose and 80/100 amylopectin was Used as a reference and compared against two PAP starches, oxi- Dized with hypochlorite in one case and ozone in the other.
