The present invention relates to an amino acid sequence of branching enzyme of potatoes II (SBE II) which altering the amylose and amylopectin ratio in potato starch as well as to reduce or change the degree of branching of amylopectin, its fragment, with functional facilities of enzyme with complete sequence, isolated DNA sequence encoding this enzyme and their fragments and variants, a vector comprising the whole or functionally active part of the isolated DNA sequence. Further is described a process for the production of transgenic potatoes with either an increased or a decreased degree of branching of amylopectin starch, which comprises transfer and incorporation of a vector into the genome of a potato cells, regeneration of intact, whole plants from the transformed cells and the use of transgenic potatoes for the production of starch.
